I bought this in combination with the kadai and dosa pan in an attempt to get rid of unhealthy nonstick ware and also to reduce waste due to the annual change of all nonstick vessels. The pan is very heavy and if maintained as per the instructions on the manual, it yields an almost nonstick surface that will only improve with time and use. You might need to Google on cooking dosa on castiron if you're doing it for the first time since it is a vastly different experience than using a non-stick pan. This one is built to use for a whole lifetime and more. I couldn't have had a more satisfactory buy, this provides a healthy medium to cook in and saves unnecessary waste and money spent on replacing nonstick ware.
