The famous fast food of Maharashtra now popular globally Pav Bhaji was originated in Mumbai. In the late 1800s it was invented for the mill workers in Mumbai who needed fuel and energy from toiling for hours. Although the humble bhaji came from there it was usually served with bhakri (rice flour bread) instead of Pav. The Pav was a contribution of the Portuguese who invaded Goa and had been missing their bread from home. This slowly spread from Goa to Mumbai and then to other parts of Maharashtra and became a staple. While this masala is made for Pav Bhaji the real flavours of Maharashtra make it a great choice for other street foods of the region like Masala Pav and Masala Pulav to retain that authenticity.
